Summer Supper

Hello Everyone!
 Let me just start with saying it has been one of the warmest weeks up here in the Pacific Northwest, which is probably a joke to you all living in hotter climates. But, believe you me, its been so humid lately and I (quite frankly) am used to dry heat more than humidity [due to being California born and raised in dry heat for most of my life]. Moving up here two years ago, my family discovered what summer was like in the beautiful pnw, VERY quickly. It was raining in June, progressively hotter in July and extremely hot in August. But anyways, now being well adjusted and such I'll talk about what I've made this evening for dinner. FINALLY! If you haven't noticed by now, I talk a lot. I guess it's better than being socially awkward, well maybe...Again, I just want to share with you what I made, and how to make it in your own homes.

Here's my mission statement:

  • Lastly, I believe cooking should be a family gathering and celebration of life where everyone comes together to enjoy each other's company.
Now, The Menu:
  1. Grilled Lemon/ Rosemary (Garlicy) Chicken
  2. Roasted Potatoes
  3. Raspberry Mint Lemonade
  4. Fresh Long (Steamed) Green Beans

GRILLED LEMON/ROSEMARY (GARLICY) CHICKEN
What you need:
*1 whole organic chicken
*1 lemon
*A few sprigs of fresh rosemary
*5 to 6 cloves of Garlic (OPTIONAL)




How to: 
1. Place whole chicken on a cutting board and clean the insides out.
2.Quarter up the lemon and place inside the cavity of the chicken, then add a sprig of rosemary along with the garlic cloves.
3.Then, add your favorite seasonings to the skin of the chicken. I used garlic salt, lemon and garlic pepper. ( Plain salt and pepper would suffice)
4.  Once the chicken is all ready and set, heat up the barbeque to 450 degrees.
5. When the grill has reached 450, then place the chicken in the middle of the grill.
6. Cook for 90 minutes, periodically checking the chicken and flipping it.
7. Chicken should be fully cooked by 90 minutes, remove from grill, allow to rest for 10 minutes.
*[This allows for the meat to retain juiciness and tenderness]* 




ROASTED POTATOES
What you need:
* 5 to 6 medium sized red potatoes
* Olive Oil
*Salt and Pepper
*Rosemary 
Diced Potatoes
Wrapped in Foil Packet with Olive Oil











RASPBERRY/MINT LEMONADE
What you need:

-1 to 2 cups of fresh or frozen berries
-A few sprigs of mint ( to your liking)
-1 to 2 bottles of Organic Lemonade














FRESH LONG STEAMED GREEN BEANS
